Another recipe=Santa Fe Rice and Beans

Here is our version of Santa Fe Rice and Beans. This is very very simple and really really good.

1 lb of ground beef/ground chicken breast
1 can black beans, drained and rinsed
1 can of mexi-corn, drained
2 cans of Rotel tomatoes
1/2 cup water
2-1/4 cups of instant rice (yes two and a quarter cups)
Cumin, salt pepper, onion powder, and garlic powder (to taste)

Here are the instructions now....
Season and brown the beef in a skillet. Season to taste. Make sure you are generous with your seasoning. Blend Rotel and water together. Add the Rotel mix, beans, and corn to the skillet with chicken (I use a big pot). Then, season again. Bring to a boil in the skillet, add the instant rice, stir, cover, and remove from heat. Keep covered about 8 to 10 minutes. Then, your dinner is ready.

This makes 7 servings, I believe about 1-1/2 (one-and-half) cups. Yes, this is a Weight Watcher friendly recipe too. It is only 5 points. I have also substituted plain, canned diced tomatoes, plain canned corn, and even bulgar instead of rice.

You can serve this with a little bit of cheese on top (I use FF cheese) and some sour cream (again I use FF sour cream). We also serve it with tortillas. I use the La Tortilla Factory Tortillas as being a Weight Watcher they are FREE!

Once again, I did not make this recipe up, but got it from one of the community boards from weightwatchers.com a few years ago and it has been a staple in our house. We love it!

** I did double check this in recipe builder to make sure that I wasn't lying to myself again. :) So, the points are accurate this time. :)

Thanks!

Cheryl

Here is a coupon for $1/1 Sunsilk Shampoo. I was in at Rite Aid (Argonne and Mission) on Sunday and they had these on clearance. I am not sure how much they were, but it might be worth checking. When I was at the "other" (Sprague and Pines) Rite Aid they were on clearance there too.

Recipe=Crunchy Ranch Chicken

Here is a recipe that I just posted on another site. I thought you all might like it. It is really really yummy and super easy.

1/3 cup crusted corn flakes
1/4 cup parmesan cheese (fresh or crumbs in the can)
1 pkg Ranch dressing
4 chicken breasts

Preheat oven to 350. Mix all the dry ingredients together. Spray chicken with oil like Pam or something like that. Roll your chicken in the "mix/crumbs." Bake for 25-35 minutes.

This is really reall good, but most of all IT IS WEIGHT WATCHER friendly. You probably have to calculate more points if you use the fresh parmesan, but we calculated it at 4 points per chicken breast with the "canned" parmesan. I did not make this recipe up. I happened to get it a few years ago from the WW Community Boards.

Thank you!

My Target Trip This Morning!

Look at what I got for $0.47 plust tax at Target today...........

Here's how I did it....

Air Wick I-Motion Freshmatic Ultra Starter Kit $6

Use the $5/1 coupon from the 2/7SS
Plus, use the $1/1 Target coupon from here
Final cost FREE!

Crest Kids Toothpaste 4.6 oz on a price cut for $1.49 (until 4/17)
Use the $0.75/1 coupon from the 2/7 or 3/7 PG
Plus, use the $1/1 Target coupon from here
(click on the “Kids Spring Savings” category on the left hand side)
Final cost FREE + $0.26 in overage to go towards other items!

Seventh Generation Disinfecting Products (Wipes or Spray) $2.99
Use the $1/1 coupon from here (you have to sign up or sign-in to print this one)
Plus, use the $1/1 Target coupon from here
Final cost is $0.99
So my subtotal was $0.47, then my tax was $0.69, making my TOOP (total out of pocket) $1.16. My savings was $14.45. Wow!

Anyway, I got a couple of my ideas from Hip 2 Save.  She also posted that the Dial NutriSkin Handsoap ($1.37) would only be $0.02 after both the Target coupon here (old style coupon, meaning you can print as many as you would like) and the $0.35/1 coupon from the 3/7RP. Well, unfortunately, I could not find it at my local Target (Sprague and Evergreen). I was bummed about that. That would make for some really cheap handsoap. Does any other Target around here have it? This is just an example of prices and products varying from region-to-region.

The Princess and The Frog for Cheap After Rebates

The Princess and the Frog Deluxe Blu-ray will be released on Tuesday, March 16th. Target will have it for $26.99 and it will come with an exclusive Princess Tiana purse (Walmart will have it for around this same price).

You'll want to head over here and print a coupon for $10.00 off of the Blu-ray combo set. Keep in mind that this coupon will be good only through March 21st, so you'll have to run this deal this week.
Then, there are actually 2 mail in rebate offers. What is great, is that both rebates allow for photocopies of your receipt. The movie comes with two proof of purchase tabs - so you can actually submit BOTH of them! And don't worry about purchasing all items at the same time -- that is NOT required.

Rebate #1: Purchase 2 boxes of Band-Aids and The Princess and The Frog on Blu-Ray or DVD and get a $5.00 rebate by mail. You can download the form here. It expires June 30th. Find out to get free band-aids here (Remember that prices vary from region-to-region, so the Band-Aid price may not be accurate for our area, but it is worth a shot).

Rebate #2: Purchase any roll of FrogTape Multi-Surface (24mm, 36mm, or 48mm) painters tape and The Princess and The Frog on Blu-Ray or DVD and get $5.00 rebate by mail. You can download that form here. It expires May 31st. (These average about $6.00 each at most stores).
Here is how your final transaction will look:

$26.99 Blu-ray and Purse
- 10.00 printable coupon
- 5.00 Rebate #1
- 5.00 Rebate #2
_____
$ 6.99

Thanks KC Penny Pinchin Mama for putting this all together!
