Mexican Layered Dip

Okay, I have to share with you one of the most yummiest recipes ever!!! I got my new magazine that I sent away for sometime in Novemeber/December. It is the Kraft Foods, Food and Family Magazine. It is the coolest magazine. It has a ton of EASY recipes and what I appreciate about the recipes is that they are not all full of fat and the ones that are, I think I can "skinny" them down a little. Anyway, I saw one that night and just had to make it. I did have everything on-hand. So, no need for me to run to the store. I'm not sure if that would have been very "frugal" of me? :) Anway, here goes........

This was on page 3 of the Kraft Foods, Food&Family Cookbook that came with the magazine

Mexican layered dip
Prep 10 min, plus refrigerating (I did not refrigerate mine)
Makes 5 cups or 40 servings, 2 Tbsp each at 1 pt (I figured out the point value on this)

1 pkg (8 oz) cream cheese, softened
1 Tbsp taco seasoning mix
1 cup Thick 'N Chunky Salsa
1 cup drained canned black beans, rinsed
4 green onions, chopped
1 cup shredded cheddar cheese
1 cup shredded lettuce
2 Tbsp sliced black olives
3 pkg. baked tortilla chips.

Beat cream cheese in medium bowl with mixer until creamy. Add seasoning mix; beat until well blended. Spread onto serving plate or bottom of pie plate. Top with all remaining ingredients except chips.
Refrigerate 1 hour. Serve with chips.

Okay, so this is what I did. I had the 1/3 less fat cream cheese and I used that. I also did not use olives. Also, I did not eat with chips. I toasted 1/2 of a sandwich thin and spread a serving on that. Yum. I also ate just plain with a fork. It was that good.

I figured out the points here, made they way I made it. Oh, I didn't stick to no 40 servings at 2 Tbsp each.

40 servings=free
6 servings = 3 points
5 servings=4 points

Okay if you make it with FF cream cheese, here is the breakdown....

40 servings=free
6 servings=2 points
5 servings=2 points
4 servings=3 points

It was sooooo good, I'm sure I had a cups' worth of "dip." Yum!! Please if you give it a try let me know what you think too. It was sooooo good and well worth the points!!!!

Join WW for free until 3/13/10

Join now for FREE. I am not positive how long this will last. It lasts until March 13th. You still have to pay the weekly fee, but the initial signup fee is waived. Yeah! Depending on the area you live in the weekly fee is different (meaning what part of the country you are in). I know our fee here is $12 a week OR you can purchase a monthly pass for $39.95, plus have unlimited access to Weight Watchers E-Tools. It is a great price and well worth the money.

As many of you know, I am a very very proud Weight Watcher. I have been doing the program for almost four years now. I swear by the program. I have had my ups and downs definitely, but I have been on just about all the different weight loss programs out there and this has been the best. I don't ever feel like I'm on a "diet."  Really, this is a lifestyle and a lifestyle that I love. I have lost 135 pounds on this program. Yeah, I struggle at times, but we tend to struggle with just about anything at any given time in life. This is just part of my life. At this point in time, I really cannot see living my life without being a Weight Watcher. This is how I want to live and this is how I want my kids to live. Yes, my kids eat this way to. Like I said, this is a lifestyle and a very healthy one too. My kids don't watch what they eat per se, but they are exposed to healthier foods and a variety of different foods. I mean, my kids love bulgur. How many 3, 5, or 10 year olds know what the heck bulgur is. They call fruit a dessert. Yeah, they have candy at times too, but they are exposed to good stuff too. I really want for them to eat this way. Did you know that when two parents are obese, as my husband and I are, that your kids have an 80% change of being obese too? WOW!!! This is because of the kind of foods/behavior that they are exposed to. I seriously don't want that. I have been fat all my life. I certainly don't want my kids to ever have to endure that kind of pain.

Anyway, this is just part of my story. What may work for me may not work for you. Definitely, what I believe you may not believe, but this has worked for me and I plan on continuing on my journey with Weight Watchers for the rest of my life.

So, if you are interested, definitely go give it a try. It is well worth it. They also have an on-line program too that you can do on-line and not have to attend weekly meetings, but I must say that the weekly meetings are very very motivating and you do tend to learn a lot from your fellow Weight Watchers.

Even if you don't sign up, go take a look at their website. You access free recipes from other Weight Watchers or even just take a look around at some of the chat boards, or even take a look at some of the info that they have posted on the site.

***I was not paid by Weight Watchers to say any of this stuff about them. I just really really like the program and what it has done for me and my family.

This is thanks to Hip 2 Save ......................

Over 630,000 cribs are being recalled by Dorel-Asia. Apparantly the drop side hardware can fail causing the drop side to detach from the crib. When the drop side detaches it creates a space in which an infant or toddler can become entrapped and suffocate or strangle.

The cribs that are part of this recall were sold at K-Mart, Walmart and Sears stores nationwide from January 2005 to December 2009. You can go here to see the Press Release and the model numbers and pictures of the cribs included in this recall.
If your crib is in fact part of the recall, then you should immediately stop using the crib, find an alternative safe sleeping environment for your child, and contact Dorel Asia to receive a free replacement kit. Consumers should log on to http://www.dorel-asia.com/crib-safety-notice or call the Dorel Asia toll-free at (866) 762-2304 between 8 a.m. and 4:30 p.m. ET Monday through Friday to order the free replacement kit to prevent child entrapment in these cribs. The repair kits will be provided to owners within the next several weeks.

NEW UPDATE: There is also a huge recall on Graco Strollers! You can check out the Press Release here.

Thanks.
